    What's for dinner, mushrooms? How do we prepare them? Pickled? Pics of our preparations.

    I thought it would be nice to have this section for how we prepare our mushrooms on the dinner plate instead of including instead of posting them in the reports,pics and locations section. This would make a faster thread for people like me who love to see those treats pictured on the dinner plate. Then we wouldn't have to search through all the other posts to find them.

    First and foremost, this is Drakes Crispy Frymix. I use this , mostly because I like it over all other Batter Mixes . Use what you like though !!

    Beer Battered, Deep Fried Chanterelles & Lobster Mushrooms. I tried both in a Cocktail Sauce and a Sweet & Sour Sauce. Sweet & Sour was better

    Chanterelle & Cheese Pizza

    Giant Puffball Crusted Pizza. I cut 1/2" slices of Giant Puffball and fried them on both sides with Parmesan Cheese in Olive Oil, to a golden brown. Then topped them with your toppings of your choice. Baked at 350 till toppings turn golden brown.

    This is not mushrooms but still an excellent foraged food. Battered and Fried Milkweed Pods. Boil the pods in water for 10 min. Boil again in a fresh pot of water 10 min. Drain, cool, then batter & fry to a golden brown.

    For several years I liked to fry my Morels two different ways at the same time. Here I'm trying Pamela's Pancake Mix which has almond meal, no wheat and of course Corn Meal needs no explanation.

    Morels, leeks/ramps and wild rice. It tastes much more satisfying than it looks in the frying pan. Here the Morels were rehydrated, the ramps were fresh that day. The wild rice is boiled just a tad firm and then refrigerated so that it is cold when it hits the frying pan during the stir fry.

    About 2 or 3 times a year I'll make Shitake Bacon.
    Shitake mushrooms sliced 1/8" or thinner

    1/4 cup of Olive Oil and a tablespoon of salt. Some add smoked paprika

    put them on a parchment paper on cookie pan. Bake at 400 turning every 10 minutes for 40 to 50 minutes.

    They'll crisp up and taste like crisp bacon. Gotta try it to believe it. I've enjoyed sharing this with others.

    Although I don't have a pic here is my recipe for a simple batter for vegetables and mushrooms.
    Whisk 1 extra large egg, then whisk in 1/2 cup of water,then stir in 1/2 cup of powered milk, then stir in 1/3 cup of rice flour.

    What I like about puffball mushrooms is the ease of cutting them into any size or shape you like. My current favorite is to cut them into the size of large steak fries and coat them and fry them. Yum. Besides catsup I enjoy aioli mustard.

    Jack,

    Shitake logs take a year or two to get the goods. Thats a long time to wait for Shitake Bacon. Ha.

    I did a couple of web-bought bags of Shitake mycelium that were ready to fruit several years ago. I got 3 flushes out of each. I have now saved spore prints from my Shitake logs that fruited this spring (after 2 years waiting). I'll put pics on the cultivation topic.
