Candy Caps in Mount Shasta

    Hey I have found numerous candy caps in the area the last few days, & picked some, dried them & they still taste bitter. Have any of you had experience with them? The burnt orange, small (2-2 1/2" diameter caps), chalk-like snap when broken.. I'm waiting on a spore check now.. but these guys are bitter. Also, found a HUGE lion's mane this afternoon that I cooked up for dinner like steak, it was insanely delicious. *Feeling Lucky*

    I just made some Candy Cap Pudding with them. If you're trying to eat them alone, they are bitter or just plane rotten tasting. They need sugar to release their Maple flavor. Try this with them : Grind 4 or 5 caps up to a powder, take 2 cups milk, 1/2 cup sugar, 3 or maybe a little more tablespoons Corn Starch, 1/4 teaspoon salt, 1 teaspoon vanilla extract, 1 tablespoon butter. Mix it all together and cook over medium heat string quit often till it thickens. Let it chill before serving. Let me know what you think. This pudding was topped with Candied Chanterells too.
