Checked one ramp spot I know about, not the one where I do my gathering. It's warmer. Where I do my gathering is in a cold sink down in a creek bottom. The "warm spot" ramps were up about as long as my index finger. They have a little way to go yet.

All the time! Actually make a pesto from ramp. I sauté bulbs. Use ricotta and fresh motz. Sun-dried tomatoes, venison sausage and the sautéed bulbs to make a pizza. All fresh from the property. If I’m lucky I get the morels and add them too!!!!I recently heard of a recipe for a ramp/leek pesto for pasta that I want to try this season. You use the leaf rather than the bulb.

I learned about eating hosta from this page: Hosta Shoots , after failed attempts at growing asparagus or finding any reliably, then going on a research rampage. We have so many in our garden, and I was excited! 😂 I really enjoy the shoots pan-seared so they brown and also stay crunchy, but the young leaves are mild and nice raw too.
