Mini Morel Pizzas
Oh boy-r-dese good, lol
Maybe good for smaller to medium morels

Ingredients: flour tortillas, marinara, onion, hard salami/pepperoni, morels, mozzarella and parmesan, garlic powder

Need: muffin pan, cooking spray

  1. Pre-heat oven to 400°
  2. Grease muffin tray
  3. Use whatever size drinking glass or veggie can to cut tortillas into 3-4" circles, line muffin slots with them
  4. Spoonful of marinara
  5. 1-2 onion slivers and piece of pepperoni
  6. Pinch of mozzarella
  7. Morel on top
  8. Sprinkle with parmesan and garlic powder
  9. Cook 10-13 minutes (however you like your shroom done, or until cheese bubbles at least)
  10. Enjoy!

Sourdough Scallion Pancake with Morels

Saute morels in butter until moisture is gone and they start to golden on the edges. Meanwhile chop up some green onions and a clove of garlic and set aside. When morels are done, remove from pan and add some olive oil over medium heat. Pour in sourdough discard ( I use a 6 inch pan and maybe around 1/3 cup of discard, at least enough to have it reach all around the pan and give it some thickness). Top with morels, green onions garlic, salt, pepper, and drizzle the top with olive oil. Cook until bottom is crisp and golden. Flip and cook for another 2-3 mins. Flip again and place a lid on pan. Cook for 4 mins. Pair with a dipping of olive oil and soy sauce.

Too lazy to "like" all of these posts, but I like all of these posts! Thanking everyone for contributing, so I can get some ideas while I continue to wait [im]patiently.

My husband does most of the cooking, and has made us beautiful morel and cheese omelettes with veggies, sometimes with ramps added. Wonderful stuff, and I know I'm very lucky that he enjoys keeping us fed.

We had morel and ramp pizza for supper last evening. Sorry I forgot to take pictures but here is how my wife prepared it. This is easy and fairly quick.
Ingredients are: 1 thawed pizza crust, pizza sauce, morels, ramps, shredded cheese ( she used mozzarella & muenster)

First sauté the morels
pre heat oven to 400 degrees
cover pizza crust with sauce
put the morels on top of sauce
cover morels and sauce with chopped ramps (I use just the leaves)
cover complete pizza with cheese
I like canned japleno pepper slices on top of the cheese ( optional)
Bake 10-15 minutes depending how you like your crust.
Enjoy!

Scrambled Eggs with Black Morels
Black Morels, just cut Chives, garlic and eggs sauteed in butter.

I jump start the Morels, Chives & Garlic and then add the eggs to scramble.

Then for good measure some fresh Parsley and Cheddar Cheese on top. Yum-licious!

Hey Beagleboy. Stromboli looks like a Calzone. Give us some more details, I want to make one. Is it pizza dough? What temp to cook, how long, is it wrapped in the aluminum foil? How to seal the edges?

Looks delicious!
