Saute morels in butter until moisture is gone and they start to golden on the edges. Meanwhile chop up some green onions and a clove of garlic and set aside. When morels are done, remove from pan and add some olive oil over medium heat. Pour in sourdough discard ( I use a 6 inch pan and maybe around 1/3 cup of discard, at least enough to have it reach all around the pan and give it some thickness). Top with morels, green onions garlic, salt, pepper, and drizzle the top with olive oil. Cook until bottom is crisp and golden. Flip and cook for another 2-3 mins. Flip again and place a lid on pan. Cook for 4 mins. Pair with a dipping of olive oil and soy sauce.
