My housemate Nik made me the most delicious morel mushroom risotto! This is a morel mushroom risotto cooked with shallots and a pinot grigio reduction, blended with pecorino and parmesean. It was my first morel hunt, and first taste of them, and it was just insanely delicious! Nik is an incredible chef, and he wanted to bring out the flavor of the morels so he used a small number of ingredients, and the flavors all melded together into pure perfection!

Thanks to everyone's posts in the forums, I found myself a good spot for morels in Upstate New York - and morel season coincides with my birthday each year, so it's become a tradition to go foraging and eat morel mushrooms for my birthday! My housemate is an amazing chef, and he cooked me a striped ravioli, stuffed with a morel mushroom and artichoke heart filling, flavored with shallots and ricotta, and lightly fried in a parsley sauce. It is such a good experience to go foraging with friends, then bring back the mushrooms, only to get this insanely exquisite meal prepared for my birthday - it was the best gift! And I would highly recommend preparing morels with artichoke hearts - they go so well together!
