Pheasant's Back Recipes?

    Since the Morels have been a little rough, and I noticed several other people saying there's been an abundance of Pheasants back, how does everyone like to prepare theirs?

    I just tried them this year, cut into small pieces, and fry in bacon grease. Bacon grease makes everything good!

    Haha, true. Will have to try that out. Did it make them tough at all?

    No, I read that if you get large ones, to only use the outer edge. So I cut away anything thicker than an inch. If it is thicker, slicing the thin does the trick. I have just been grabbing smaller ones the past couple of times.

    And by the way, last Friday pulled 2 dozen morels out of wild cat den. Its not the 50 lbs some of the veterans pull, but not bad for a public park!

    Nice, I was thinking about trying it out down there, might have to go next year. Girlfriend likes having picnics there in the fall.

    As for the Pheasants, ditto on the small ones. They've been in such abundance that when I find them if running my thumb nail over the top doesn't split the skin then I don't even bother.
